The Isle of Wight Cheese Co started producing cheese on the Queenbower farm back in 2006.
One of the first cheeses they started to produce was the Isle of Wight Blue. Produced using pasteurised Guernsey milk from their own herd and also a local herd. Being naturally rinded it is covered in green, blue and grey moulds.
The moulds give the cheese bags of character and the variety of surface moulds which makes the cheese stand out!
When the cheese is young it has a relatively mild blue flavour but as it matures the cheese will get softer and the blue will become spikier. A fantastic example of a soft blue cheese.
